Paleo Sweet Potato Pancakes - Newton / Watertown

Sadly there are many ways to make a sad pancake. Lucky for you we've got a tasty recipe to share. The best part is that its made with clean, non processed, gluten free ingredients (Minus the butter in the photo).

We're using one of my favorite things to eat, the sweet potato. There are few foods that are chock full of the right stuff. Nutrient-dense and vitamin-packed, the vibrant orange root vegetable has got everything from beta-carotene, Vitamin A, B, Potassium, Fiber, Iron and Manganese. It's also ananti-inflammatory and provides your body with anti-oxidants.

 

Did I mention they taste good?

 

But enough of that, it's time to get messy because I'm hungry!

 

Difficulty: Easy

Total Time to Make: 30 minutes

Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 2

 

Ingredients:

 

1 small sweet potato

2 large eggs

½ teaspoon cinnamon

¼ teaspoon baking soda

Coconut oil

Dash of salt

 

Optional:

Dash of ginger

Dash of nutmeg

Honey (for sweetness)

½ mashed ripe banana (because why not!?)

Coconut (if that's what you're into)

 

Directions

 

1. Wash sweet potato and peel it. Cut it into small cubes.

2, Steam sweet potato until very soft.

(Option 1: Boil sweet potatoes on stove top)

(Option 2: Oven Bake Sweet Potatoes --> extremely time consuming)

3. Mash Potatoes! No Chunks

4. In a bowl, whisk eggs with a fork (or whisk) until frothy.

5. Add in the mashed sweet potato and mix. ( a wooden spoon works well too)

6. Add baking soda, cinnamon, salt and any of the optional ingredients.

7. Incorporate all the ingredients into a smooth, well-mixed batter.

8. Heat a skillet over medium heat.

9. Add just enough coconut oil to cover the bottom.

10. Drop batter in spoonfuls into the skillet.

(Get creative and make any shape pancake!)

11. Cook 2-3 minutes or until cooked. Flip and cook on other side 2-3 minutes.

(Try not to make the pancakes too thick as the center may not cook as fast as the outside layer)

Top with honey, maple syrup, almond butter, fruits or nuts

 

When I'm feeling up to it, (or when my kids don't run me down) I like to bake the sweet potatoes the night before.

 

1. Keep skin the on, instead chop off tips.

2. Completely wrap in aluminum foil.

3. Bake @ 400'

4. May take at least 60min - 75min to finish.

 

I do this mainly because of the caramelization that occurs when wrapped and baked. I find it makes the pancakes a whole lot sweeter.

 

Go power your day and remember that breakfast can be fun. Even when you're rushing to get the kids ready, lunches packed and out the door before everyone's late... again...
